Watermelon and Feta Salad: A perfect Mediterranean treat

That’s the best use a watermelon can get! This is one of my favorite summer recipe. Very simple ingredients, no hassle and a super quick recipe which everyone loves! Whenever I get a watermelon in my house, a part of it eaten away by my daughters right away, some of it is used for making fresh juice and rest of it goes in to this delicious, crunchy and refreshing salad. Here’s the recipe for it:

INGREDIENTS:

Watermelon (deseeded and cut in cubes): 2 cups

Black Olives: 7-8

Red onion (sliced and dipped in vinegar): 1

Feta cheese: 1 cup

Walnuts (roughly chopped)

Flat parsley/ Coriander/ mint leaves: few

DRESSING:

Olive oil: 2 Tbsp

Lemon juice: 1Tbsp

Vinegar: to soak onions (optional)

Salt: as per taste

Black pepper: as per taste

METHOD:

Take sliced red onion and soak them in vinegar. This reduces the pungency of onion and also help retain its crunch for longer time. If you don’t like the taste and flavor of vinegar or you want to retail the strong taste of onion, you can skip this step.

In a large salad bowl, put cubed watermelon. Add sliced olives, onions and parsley leaves.

In a separate bowl/ small bottle, mix all the ingredients of dressing and shake well.

Pour it over salad, add crumbled feta cheese and give it a light toss. Try not to mix too vigorously as we don’t want to break pieces of watermelon further into smaller pieces.

There you go, your salad is ready to dig in!!

    Lookin’ tasty! I love Mediterranean dishes, especially because they are typically made with Feta. Love me some Feta cheese. I’d never given combining this love with my love for watermelon. Oh yummy!!!
