Now, that’s what summer looks like to me! colorful, fresh, juicy and tempting!! I first made it for a live online cooking series where I was invited as a guest chef. This was a vegetarian version of my original recipe I make with chicken (don’t worry my chicken loving friends, I’ll be sharing that recipe too!) but this too turned out to be delicious and equally nutritious. I’ve used paneer (cottage cheese) here in place of my staple chicken. If you’re a vegan or are lactose intolerant, you can use soy chunks or tofu as well.
Here’s the recipe:
INGREDIENTS:
Paneer/ cottage cheese (cubed): 150gms
Avocado (cut in cubes) : 1 (Don’t forget to apply lemon juice immediately after cutting it!)
Mango (cut in cubes): 1 (save a little to make puree for the dressing)
lettuce/ mixed greens: 1 packet
Red onion (sliced) : 1
Cherry tomatoes (halved): 5-6
coriander leaves – few
Almonds (thinly sliced): 7-8
FOR DRESSING:
Mango puree: 2 tbsp
Olive oil: 2 tbsp
Lemon juice: 2tbsp
chili flakes: 1/2 tsp
salt: as per taste
METHOD:
Cut cottage cheese or tofu in cubes and grill them. I sauted them in a pan with few drops of oil till golden brown, you can grill them in oven or tandoor also. Now, take your salad bowl and get mixing! Add lettuce or any other type of greens in the bowl. Add grilled paneer, avocado, mangoes, onion and tomatoes.
Time to make dressing! Take a small bottle (or bowl). Add all the ingredients for dressing and give it a good mix.
Drizzle your colorful dressing over your salad and I bet you can’t stop drooling over it!! Well, just give it a slight toss, add almonds and coriander and that’s it! go ahead and eat it right away!!
