Almond and Jam Cookies

As much as I love homemade cookies, baking them is a hassle every time. There is no doubt that best of the results come with patience, being a mother of twin girls, I don’t have that privilege and patience in my pocket.
I always search for an easy recipe with fewer ingredients and faster cooking process. So I found this recipe on allrecipes.com which was perfect for me. Easily available ingredients ( most of which were already there in my tiny kitchen pantry) and simple process! I first made it for Christmas and was instantly a hit with my family. So, I made another batch recently, with some changes to original recipe. I reduced the oven temperature by around 10 degrees and increased the quantity butter and flour. I also tried almond flour in place all purpose flour and it turned out perfect.

So, without further much ado, here’s the recipe for super easy and super scrumptious cookies:

INGREDIENTS:

Butter: 1-1/4 cup

Sugar: 2/3 Cup

Almond flour/ all purpose flour: 1-1/4 Cup

Almond extract: 1/2 teaspoon (Do not recommend using almond flavoring. Use pure almond extract, it makes all the difference)

Jam (flavor of your choice) : I used various flavors like orange, strawberry, raspberry and cherry

METHOD:

Preheat oven at 165 degree C.

Mix butter and sugar with a whisk or hand mixer till creamy and smooth.

Add almond extract and flour and mix to bring the dough together. Take small piece of dough (around 1 Tsp) and roll into a small ball. Press thumb in the center to make small depression. Fill in jam of your favorite flavor.

Place it on baking tray lined with parchment but don’t grease the tray. Chill the cookies for 10-15 mins and then put in the oven and bake for 15-20 mins.

As every oven has different settings, keeping checking cookies and take out when it starts turning slightly golden and starts to crack on top.

Let it cool on cooling rack for 10 mins and then DIG IN!!!

Tip: Chilling for few minutes helps preventing melting or leaking of jam.

    Hmm! I know what it’s like to have no time for patience. I was a single parent father and had quite a lot on my proverbial plate.
